INGREDIENTS
- 1 lb ground beef
- taco seasoning
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can back beans
- 1 cup frozen corn (or canned)
- 4 cups chicken stock
- 1 can diced tomatoes (796 ml)
- 1 can diced green chillies (option – for spice)
- Optional toppings: shredded cheese, cilantro, sour cream, lime
- Tortilla chips for dipping (also optional)

INSTRUCTIONS
- Saute onions and garlic in a the instant pot on high. Add in ground beef and cook through, adding in the taco seasoning part way through.
- In the instant pot, add in tomatoes, beans, corn, chicken stock, and beef mixture. Stir until combined
- Set instant pot onto “pressure cook” setting on high. Put lid on and make sure the vent is sealed. Cook for 9 minutes.
- Let the pressure release naturally for 15 minutes.
- Let simmer on the saute option until it reduces a little bit.
- Serve with desire toppings (I like shredded cheese and cilantro)

*Note: this recipe is really flexible. You could add things like carrots and celery or use chicken instead of beef.
