TORTILLA SOUP

INGREDIENTS

  • 1 lb ground beef 
  • taco seasoning 
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can back beans
  • 1 cup frozen corn (or canned)
  • 4 cups chicken stock
  • 1 can diced tomatoes (796 ml)
  • 1 can diced green chillies (option – for spice)
  • Optional toppings: shredded cheese, cilantro, sour cream, lime
  • Tortilla chips for dipping (also optional)

INSTRUCTIONS

  1. Saute onions and garlic in a the instant pot on high. Add in ground beef and cook through, adding in the taco seasoning part way through. 
  2. In the instant pot, add in tomatoes, beans, corn, chicken stock, and beef mixture. Stir until combined
  3. Set instant pot onto “pressure cook” setting on high. Put lid on and make sure the vent is sealed. Cook for 9 minutes.
  4. Let the pressure release naturally for 15 minutes.
  5. Let simmer on the saute option until it reduces a little bit.  
  6. Serve with desire toppings (I like shredded cheese and cilantro)
  7. Enjoy!! 

*Note: this recipe is really flexible. You could add things like carrots and celery or use chicken instead of beef.
