PRIME RIB ROAST

INGREDIENTS

  • 4 lb prime rib roast
  • 2 russet potatoes, sliced
  • 1/2 cup butter
  • salt and pepper

INSTRUCTIONS

  1. Preheat oven to 500F. Spray a cookie sheet with cooking oil and layer sliced potatoes
  2. Coat entire roast in the room temperature butter and cover generously with salt and pepper. Place on top of the potatoes, in the middle. See picture for what it should look like.
  3. Cook aprox. 5 minutes per pound. For a 4lb roast, cook in the oven for 20 minutes at 500F.
  4. After 20 minutes, turn the oven off and DO NOT OPEN THE OVEN DOOR. Let the roast sit in the oven for 2 hours or until it reaches desired internal temperature (I was aiming for 130F as I like it on the rare side).
  5. Take it out and let it rest on the counter until it drops 10F.
  6. Carve, serve, and enjoy!

Tips:

*this is where an oven thermometer with a probe and cord would come in really handy! It would be quite difficult to use this method without one.
