IGREDIENTS
- 1 lb ground beef
- 1 onion, chopped
- 2 garlic cloves, minced
- Taco seasoning (either bought or create your own!)
- 1 can chopped green chilies
- 2 cups cottage cheese
- 8-12 tortillas
- 2 cups shredded cheese (cheddar, monterey jack)
- 1 can enchilada sauce

INSTRUCTIONS
- Preheat oven to 350°F
- Heat frying pan over medium high heat and add olive oil, onion and garlic. Fry until aromatic and then add in the beef. Cook partially through and add the spice mixture and green chillies then proceed to cook until no longer pink.
- Smear some enchilada sauce on the bottom of a baking dish
- In each tortilla, place beef mixture, topped with a scoop of cottage cheese and some shredded cheese. Roll. Place all rolled tortillas side by side in the baking dish. Pack tightly.
- Top with the rest of the enchilada sauce and shredded cheese.
- Bake for 10 minutes covered and uncovered until golden brown on top (probably 10 more minutes).
